I am rushing this post because many of the attendees wanted my dip recipe before the holidays. The irony is I still have a Minnie Mouse birthday party from August to post. I have a feeling that won't happen until the first of next year.
These appetizers are really easy to pull together and they will be a big hit at your next party!
Tomato & Bacon Dip - The Most Popular
The tomatoes give this dip a really refreshing taste and it is a slight twist on a Ranch bacon & cheese dip that I usually make. This was huge success - everyone loved it. I actually doubled the recipe and there wasn't a drop left.
Ingredients
16 ounce carton of Sour Cream
1 tablespoon mayonnaise
1/2 packet of ranch dip mix
1/4 cup milk (increase or decrease depending on desired stiffness of dip)
3 ounces of fresh bacon bits (or 6-8 slices of bacon crumbled
4 ounces Cheddar Cheese
1 tomato, diced in small chunks
Directions
Mix all ingredients together and let set in the refrigerator overnight. Note: Gently fold in tomato dices last.
Deli Pinwheels
Ingredients
8 ounces Deli Turkey, thinly sliced
8 ounces Deli Ham, thinly sliced
8 ounces Deli Roast beef, thinly sliced
1 pkg. Large Sun-dried Tomato Basil Tortillas
1 pkg. Large Garden Spinach Herb Tortillas
1 carton of soft Garden Vegetable Cream Cheese
1 carton of soft Plain Cream Cheese
1 pkg, of Sun-Dried Tomato Dip Mix
3 ounce pkg. of fresh crumbled bacon
1 small jar of pimentos
5 baby carrots, finely diced
1 celery stick, finely diced
8 ounces cheese
Directions:
Turkey Pinwheel:
Spread garden vegetable cream cheese all over the garden spinach herb tortillas (somewhat thick), sprinkle pimentos over cream cheese and then sprinkle cheddar cheese. Place turkey slices (I used 5-6 thin pieces per tortilla) on top and roll tightly. When completed rolling use a dab of cream cheese to hold the wrap together (if it is loose). Slice the roll into 2 - 3 inch pieces. Repeat until you have your desired amount.
Ham Pinwheel:
Spread garden vegetable cream cheese all over the garden spinach herb tortillas (somewhat thick), sprinkle pimentos over cream cheese, sprinkle desired amount of finely chopped carrots and celery and then sprinkle cheddar cheese. Place ham slices (I used 5-6 thin pieces per tortilla) on top and roll tightly. When completed rolling use a dab of cream cheese to hold the wrap together (if it is loose). Slice the roll into 2 - 3 inch pieces. Repeat until you have your desired amount.
Roast Beef Pinwheel:
Mix the plain cream cheese with the sun-dried dip mix (I only used part of the package until it was seasoned to my liking).
Spread sun-dried tomato seasoned cream cheese all over the sun-dried tomato basil tortillas (somewhat thick), sprinkle pimentos over cream cheese and then sprinkle cheddar cheese. Place roast beef slices (I used 5-6 thin pieces per tortilla) on top and roll tightly. When completed rolling use a dab of cream cheese to hold the wrap together (if it is loose). Slice the roll into 2 - 3 inch pieces. Repeat until you have your desired amount.
Fruit & Cheese Skewers
I used strawberries, pineapple, holiday grapes, cheddar cheese and Monterrey jack cheese on eight inch skewer sticks (medium size). I did various combinations.
