Easy Taco Pie

I found the recipe in a local community cookbook from the early 80's listed under their "International" section (which makes me chuckle - not quite the exotic fare I was thinking of for this section).  You will discover this easy to make taco pie quite tasty with the combination of spicy meat, cheese, and sour cream inside a hot pie shell. In fact, I like it better than taco shells. 


Even though my kids are now into their twenties this is almost always their meal of choice for their birthday celebrations.  It also heats up well the next day. In fact, whomever is having a birthday usually gets a whole pie to take home with them. Give it a try - your friends and family will love it!

Ingredients
2 prepared pie crusts 
2 lbs. hamburger
16 ounces sour cream
8 ounces Cheddar cheese
1 pkg. of Tortilla chips
1 pkg. Taco seasoning 

Directions

Crush tortilla chips in a closed plastic bag.
Cover the bottom of both pie crusts with a thin layer of crushed chips (reserving some for topping).
Brown meat, drain off grease. 
Add a small amount of water for moisture and add Taco seasoning (do not use the amount of water called for on seasoning packet).
Divide meat and place over crushed tortilla chips in pie shells.
Top with sour cream and sprinkle cheese heavily over sour cream.
Lightly top off with crushed tortilla chips.
Bake at 350 degrees for 45 minutes for 2 pies or 35 minutes for 1 pie.
Serve with lettuce and salsa.
