This is a tasty casserole filled with beef, rice, onions, peppers and savory seasoning. Throw it together, bake and serve with some rolls and a salad and you have an easy dinner!
This is one of my favorite cold weather casseroles.

Ingredients
1 to 1 1/2 pounds rib eye, sirloin, or round steak (either one works nicely), cut in strips
2 Peppers any color (I like the sweetness of the yellow pepper), sliced
1/2 onion, sliced or diced
1/2 pound sliced mushrooms (optional)
3 tablespoons canola oil
1/2 heaping cup of uncooked rice (not instant)
16 ounces beef broth
1/3 cup water
2 tablespoons Worcestershire Sauce
1 tablespoon fresh or dried parsley
1/2 teaspoon pepper
Directions
Heat oven to 350 degrees F.
Oil a medium size casserole dish
Heat oil in a skillet and add strips of beef and fry until browned (does not have to be thoroughly cooked)
Remove beef to casserole dish
With remaining oil, saute sliced peppers and onions until they begin to soften
Place sauteed peppers and onions on top of beef
Sprinkle rice on top.
Mix broth, water, Worcestershire sauce, pepper and parsley together and pour over beef and vegetables.
Bake for 45 minutes or until rice is completely cooked.
Note: If you need to add additional liquid during the baking process, you can add another 1/4 cup of water.
