Caesar Salad Wrap
There are two things I really like and that is Caesar salad and sandwich wraps so I decided to combine the two and boy I wasn't disappointed it was delicious. This recipe is a real time-saver taking approximately 5 minutes to pull together. It is a wonderful easy light meal but would also be great to serve at parties as well.
Even my husband, the picky eater, agreed to give it a try. I said "I am going to fix a wrap sandwich for myself what do you want?" I could have fallen off my chair when he said I'll take one. I thought maybe he was suffering from heat exhaustion or something. He almost never just agrees to something different. Then, I said "Well, I'm making mine with a dried tomato wrap but I will make yours with a plain wrap" and he said he wanted the dried tomato (he doesn't even like tomatoes)!! His only request was to switch out the Caesar dressing for Ranch. Ooookay. He actually really liked it and said he would eat these anytime. What a mysterious evening.

Ingredients
Dried Tomato Wraps
Caesar Salad Dressing
Parmesan Cheese (I used Cheddar)
Chicken, cooked and diced (approximately 1/2 c. per wrap)
Salt and pepper (optional)
Directions
Spread a thin coating of Caesar Salad Dressing on wrap. Sprinkle with cheese. Add lettuce and then chicken. Sprinkle salt and pepper on chicken and sprinkle with cheese. Top with cheese and roll. Cut roll in half.
I used a store bought Rotisserie Chicken to save time although this is also a wonderful way to use left over roasted or grilled chicken.
