Maple Smoked Pulled Chicken

My husband decided he wanted to try his hand at smoked pulled chicken for our Memorial Day cookout. He is already an expert at pulled pork so I was prepared for some really good pulled chicken.

As my youngest daughter would say it turned out to be the bomb.com! It was absolutely delicious with the maple, honey and barbecue sauce flavors melding together into the juiciest chicken you will ever taste. Served with his you can't get enough sweet smoked baked beans it was (as I would say) a to-die-for meal!

Breaded Pork Tenderloin Sandwich a Midwest Favorite

One of the things I miss from Iowa are the breaded pork tenderloin sandwiches. There are restaurants that have it as their signature sandwiches and others who have it on their menu, which gives the burger lover a taste of something different. Despite the sandwich’s name, most are cut from the pork loin, not the pork tenderloin.

You can't beat a grilled ham slice topped with  pork burger, capped with bacon and a splash of BBQ Sauce = One Tasty Sandwich! On occasion we eat at a local restaurant that serves ham on their hamburgers. This is actually why we go to this restaurant just so my husband can have a hamburger with ham. So the other night he was begging me to make a hamburger with ham but I only had ground pork on hand which made me think that a triple "pork" burger might just be scrumptious. It was!

Caesar Salad Wrap

There are two things I really like and that is Caesar salad and sandwich wraps so I decided to combine the two and boy I wasn't disappointed it was delicious. This recipe is a real time-saver taking approximately 5 minutes to pull together. It is a wonderful easy light meal but would also be great to serve at parties as well.

Roast Beef Salad - Great for Sandwiches or an Appetizer

Roast Beef Salad makes an exceptionally great and unique sandwich but it is equally good just served as an appetizer to spread on your favorite crackers. Although it has all of the features of the standard tuna, chicken or egg salad, it is just different enough to stand out.

Hot Cheesy Ham & Herb Sandwich

This is just the best sandwich! It is quick and easy to make, scrumptious & filling! A great lunch or dinner meal. Having an almost empty frig & cupboards forces you to use a little creativity which is exactly what happened the day I came up with this sandwich.  I hate grocery shopping unless I am on a creative food shopping spree and then it is fun. Otherwise, forget it. So this was one of those days when I had limited food items available in my house. I just wanted a sandwich but something different and hot.

Grilled Bourbon Glazed Portobello Mushroom with a Mini Cheddar Jack Hamburger

What a conundrum Portobello burger or cheeseburger for lunch. I use to make high level decisions all day long and now I can't even make a choice on what to eat for lunch.   I guess this is what happens when you are retired.  So I decided to do both, portobello cap grilled with bourbon sauce and a mini cheddar jack hamburger on top.  How could I possibly go wrong?  Well I didn't and it was delicious which is why I am sharing.
