If you love homemade sweet pickles you are going to love this quick and easy method of preserving. You also won't be able to resist the sweet mix of flavors!
There is one thing I can count on and that is every summer having more cucumbers than I can use. In response to the overload you can count on me making a batch of freezer pickles.
Pickle Ingredients:
7 cups sliced cucumbers
1 cup onion
1 cup chopped peppers
1 cup celery
Directions:
Sprinkle with 2 tablespoons salt and let set for 2 hours.
Drain and rinse well.
Pickling Juice Ingredients:
2 cups sugar
1 cup white vinegar
1 teaspoon celery seeds
1 tablespoon pickling spice (optional)
Directions:
Mix with pickles and let stand for 1 1/2 hours. Place in air tight storage containers or bags and freeze.
Makes 4 pints.
