If you love Cashews you will absolutely love this candy recipe. Exquisite clusters of whole cashews surrounded by soft chewy caramel and topped with milk chocolate.
1-11 ounce bag of caramel bits
1 ½ tablespoon butter
1 ½ tablespoons Carnation Evaporated Milk
1 cup whole salted cashews
6 ounces milk chocolate chips, melted
Note: I like my caramel soft but if you want a harder
caramel reduce the butter and milk to 1 tablespoon each.
Directions
Lay wax paper on a large cookie sheet.
Lightly coat the wax paper with butter (to prevent sticking)
In a medium size bowl add caramels, butter and evaporated
milk
Microwave for 45 second and stir. If not completely melted
microwave at 30 second intervals until completely melted, stirring each time.
Stir in nuts until completely incorporated.
Drop mixture by spoonful onto the wax paper.
Let caramel mixture set up.
Melt milk chocolate in microwave following the same
microwave instructions as above.
Spread melted chocolate on top of cluster (I used a pastry
bag to dollop the chocolate on).
Storage
Refrigerate in an airtight container until an hour or so
before serving.
Remove cluster from container, plate them, and let them come
