These bacon wrapped onion rings are unbelievably delicious. In fact, they are so delicious that they never made it to the buffet table - everyone was picking them right off the smoker! They make a great appetizer but would also be a delicious topping a burger.
The bacon lovers "loved" them as a medium size ring and the onion lovers wanted me to cut them just a little thicker next time. Next time (and I can guarantee you there will be a next time) we will make a mixture of medium and super thick rings.

Ingredients
2 very large onions
2 pounds of bacon
Lowery Seasoning Salt

Slice onions to desired thickness. Note: Thicker slices hold up better during the cooking process and make sure your slice is straight because crooked slicing results in broken rings.
Remove small inner circles of onion. Spiral wrap the bacon around 2-3 rings from the outer circle of the slice. The larger slices took about 1 1/2 slices of bacon. Use toothpicks to hold bacon on onion ring.
Grill or smoke on medium low until desired crispiness. We smoked ours for about an hour until the bacon was quite crispy. On a grill it will probably take less time. I was going to serve a ranch dipping sauce to go with them but as I said above, they never made it to the buffet table.
This makes approximately 24 onion rings
