Last night I served Mushroom Gratin Casserole as a side dish with filet mignon. I love serving this dish with beef but it also goes well with chicken. In fact, I like it so much that sometimes I fix it just to have on hand for my lunch during the week (it heats up great as a leftover). You are going to love this cheesy au gratin recipe with white and baby bella mushcrooms. It is very rich so a little goes a long way!

Brined and Grilled Cornish Hens with a Garlic,Lemon Zest Rub
Wanted chicken the other night, but I was in the mood for something different. I gazed at the turkey, then walked by the chicken and there in a little corner were the Cornish Hens. My Ah Ha moment.

Refried Black Beans
Warmed up today in Florida but kind of cloudy so I needed to brighten up my late lunch/dinner. I'm grilling Mahi Mahi. Needing a side dish, I decided to do Refried Black Beans and grill my Ciabatta bread. Oh Yeah!! With some of my Pineapple Salsa for relish. Looking Brighter out there. I think a Pinot Grigio will go well....uncork and yum.

Fancy Chocolate Fudge Cupcakes with White Almond Truffle Filling and Ganache Piping
It was my daughter’s 22nd
birthday last night and for the first time ever she did not request a
store-bought ice cream cake. This was truly
a night to celebrate! Instead she asked for cupcakes. Oh-boy, that wasn’t quite what I had in mind. In true Mom style, I decided I would make her “fancy” cupcakes. Well, the truffle
filling, frosting and decorating were fancy and homemade. It was a busy day with limited time so I used
a cake mix which I personally like just fine. I grew up in the days when cake
mixes were not so great and we made our own cakes which were not always that
great either. Since those early baking
years, cake mixes have come a long way and when you are busy they taste pretty darn
good!
