Spaghetti Pie
This Spaghetti Pie is an absolutely scrumptious dish and lovely when plated. It is also fairly easy to make, extremely tasty and filling. A nice comfort recipe which is hard to resist!
Sometimes I just get bored making the same thing over and over so I reached for an old recipe book which is a collection of recipes from where I worked before retiring. I love these kind of cookbooks because you know the people that are contributing recipes and it gives you some time to remember and reflect.
Anyway, this particular recipe jumped out at me because it sounded so good and unique for a spaghetti dish. So I gave it a try and I was not disappointed. It was absolutely wonderful and my picky husband gave it two thumbs up which is extremely difficult to get from him. He hates new recipes. - sorry about his bad luck for marrying me!! I digress, anyway this is definitely worth your time and effort - you will not be disappointed.
The "crust" of the spaghetti pie is made with spaghetti, Parmesan cheese and egg mixed together and pressed into a deep dish pie pan.
You then slather Ricotta cheese over the crust (or you can use cottage cheese).
As you are working on the "crust" and layer of Ricotta cheese, you can also be working on the filling.
You then bake in the oven for about 40 minutes. Remove from oven and top with Mozzarella cheese and return until cheese is melted. Let stand a few minutes before serving.
The Spaghetti "crust" holds it shape and it looks beautiful plated. We also had this as left overs for lunch the next day and it still was delicious and held up perfectly. Enjoy!

Ingredients
8 oz. Spaghetti
2 tablespoons butter
1/2 cup Parmesan cheese, grated
2 eggs, well beaten
1 cup cottage cheese or Ricotta cheese
1 pound ground beef
1/2 cup onion, chopped
1/2 cup green pepper, chopped
2 tablespoons olive oil (for sauteing vegetables)
10 ounces tomatoes, diced (do not drain)
1-6 ounce can tomato paste
1 teaspoon sugar
1 teaspoon Italian seasoning
1/2 cup shredded mozzarella
Directions
Preheat oven to 350 degrees F.
Cook and drain spaghetti. stir butter, beaten eggs and Parmesan cheese into spaghetti.
Press spaghetti mixture into the bottom and edges of a 10 inch deep dish pie plate to form the crust.
Spread cottage cheese or Ricotta cheese over crust.
In a skillet saute onions and peppers in olive oil and then add ground beef and cook until done, draining off excess fat.
Stir in tomatoes (do not drain), tomato paste and seasonings and thoroughly incorporate. Cook until well heated.
Spread meat mixture over cottage cheese or Ricotta cheese.
Bake uncovered for 30-40 minutes or until warm throughout.
Sprinkle with mozzarella cheese, return to oven and bake until cheese melts.
Let stand a few minutes before cutting into pieces.
