A great recipe for those nights when you want a satisfying meal but don't have a lot of time or energy to expend.
Suggested quick sides: baked potatoes & green beans
1/3 cup Biscuit baking mix
2 eggs, beaten
1 1/4 cups shredded Parmesan cheese
1/4 cup dry bread crumbs
4 boneless pork chops, bone-in or boneless
2 tablespoons Canola oil
Salt & Pepper to taste
Salty & pepper pork chops to taste.
Place biscuit mix and egg in separate shallow bowls.
In another shallow bowl, combine the cheese and bread crumbs.
Coat pork chops with biscuit mix; dip in egg; then coat with cheese mixture.
In a large skillet brown pork chops on both sides in the hot oil over medium heat for 10 to 15 minutes. Cook uncovered and turning once.
