It is one of my top favorite salad recipes. It is a great every day dish but it usually ends up on my menu for parties and holidays. It is an especially nice salad to serve for Easter dinner.
1 head cauliflower broken into flowerets
1 large cucumber peeled and diced
¼ cup finely chopped onion
¾ cup frozen peas (don’t thaw)
1 pint mayonnaise
1 ½ teaspoon salad supreme
6 ounces of grated cheddar cheese
3 ounces fresh bacon bits
Mix together. Cover tightly! Refrigerate at least 6 hours. Toss before serving.
