Chicken Fajita Pepper Bombs

Chicken Fajita Pepper Bombs by Easy Life InspirationsThese Chicken Fajita Pepper Bombs are well ..... the bomb! They are super tasty and easy to make. Plus they are a nice spicy change from the traditional stuffed beef and Spanish rice peppers.

The small filled red peppers were really showy and would make a great fall football game day snack.

My daughter made these stuffed peppers awhile ago and she went on and on about how wonderful they were so I thought I would give it a try. Her recipe was crock pot based which only works if you are the plan ahead kind of person! So, I made up my own recipe with the intent of not making too much work for myself.

Almond Flour Pizza Crust - A Conversion from the Original Recipe

I am so excited to be involved in the April Showers Bring May Flours project with www.nuts.com.

We were challenged to convert our Quick & Easy Shake Pizza Crust from an all purpose flour crust to a blanched almond flour crust. I couldn't wait to try this conversion because I was sure if successful it would be amazingly delicious.

Oh, and not to forget, being motivated to focus on cooking healthier is much needed in my kitchen. Almonds are so wonderfully delicious that you forget they are extremely healthy for you!

This past January, I posted the Quick & Easy Shake Pizza Crust. This recipe is not only simple to make but also simply delicious.

I was so surprised to find that I was able to convert the original recipe with very little effort. Initially I was concerned that the lack of gluten could make the crust runny. I mixed the ingredients together per the recipe but substituted the almond flour for the all purpose flour. It was just a little runnier than the original. I incorporated an additional 1/4 cup of almond flour and it was exactly as the original recipe.

Then I was concerned whether it would suspend the tomato sauce and toppings.and I questioned whether the crust would be crisp. All of my concerns were unfounded. In fact, it was unnecessary worrying as always. It was perfect all the way around!

The sweet nutty taste of the almond flour crust combined with the earthy flavor of Baby Bella mushrooms for the topping is beyond heavenly!

Note: Finding almond flour in my small town was impossible and I had no intention of making my own. Ordering Almond Flour from Nuts.Com is easy, their prices are good and they have been in business since 1929 (so they have quite a bit of history).

Just follow the recipe and details of making the Quick & Easy Shake Pizza Crust Recipe posted in January 2051. The original recipe has been updated for easy conversion to an almond flour crust. If you rather, immediately Print the recipe now.

No monetary payment or product was received for this blog post. We are not an affiliate of the company and will not receive future monetary payments for clicks onto their website. The intent of the project was to promote the benefits of almond flour and the ease of incorporating almond flour into your every day cooking and baking.  We will never write a review on a brand's product nor will we promote a product, if we believe the product will not be beneficial to you. The opinions in this post are our own.

This quick shake pizza crust recipe is one that I have been making well forever so let's just say it fits into the category of vintage! I prefer this recipe over the traditional dough and my husband who is a pizza fanatic absolutely loves this recipe.

Note: This recipe was updated on 5/19/2015 to include the option to convert the recipe to gluten-free by adding blanched almond flour.

Cheesy Bacon Au Gratin Potatoes

Quick & Tasty Cheesy Bacon Au Gratin Potatoes by Easy Life Meal & Party PlanningThis casserole is a quick and tasty potato dish that goes with chicken, fish, pork & beef. In our house we love mashed potatoes and I will admit that sometimes, for convenience sake, we use packaged mashed potatoes. However, I kept thinking about how I could still stay true to the convenience and time factors and yet enhance the packaged mashed potato experience. What I ended up with was a cheddar cheese mashed potato casserole topped with bacon and bread crumbs. It was so good that we have made it several times since and have even prepared it with homemade mashed potatoes.

Kachi Keri aur Pyaj Ka Kachumber - Raw Mango and Onion Relish - Mango Mania

Thanks to Jagrut's Cooking Odyssey, http://www.jcookingodyssey.com/  I get to share this most wonderful mango recipe. Kachi Keri aur Pyaj Ka Kachumber - Raw Mango and Onion Relish - Mango Mania.

I enjoyed the many recipes on the blog, but the story of her mother making this during the hot summer months  was very intriguing. The one thing I will say it is Delicious and easy, and so it goes, here is my story.

It all started with a little love in the kitchen between  Mr. Red Onion and the very Sweet
Miss Mango. They were introduced by some spicy friends of theirs, one chili powder and cumin seed. Once mixed among the their friends they became a explosion of flavors.

Apricot Beer Can Chicken

Apricot Infused & Glazed Beer Can Chicken - Easy Life Meal & Party PlanningMy family loves beer can chicken on the grill or even in the oven. It is predictably delicious every time, easy to fix and great as left-overs. Sometimes we just fix it the traditional way which is a salt and pepper rub with beer infused steam and sometimes I experiment with the flavoring. This time I  went with an Apricot theme and it was absolutely wonderful and in fact, my favorite so far.
