 You can't beat this tasty pulled pork soft taco recipe made easy by cooking crock pot style. The brown sugar and ginger rub is amazing and goes so well with the rest of the ingredients. Topped with a spiced up sour cream topping. You can't miss trying these pork tacos. It was a huge hit with my family and to add to the list of pluses it was easy!

A great all around recipe from the Midwest Dairy Association. In a nutshell Easy, Tasty, Filling & Healthy all in one recipe - you can't beat that.

Almond Flour Pizza Crust - A Conversion from the Original Recipe

I am so excited to be involved in the April Showers Bring May Flours project with www.nuts.com. 

We were challenged to convert our Quick & Easy Shake Pizza Crust from an all purpose flour crust to a blanched almond flour crust. I couldn't wait to try this conversion because I was sure if successful it would be amazingly delicious. 


Oh, and not to forget, being motivated to focus on cooking healthier is much needed in my kitchen. Almonds are so wonderfully delicious that you forget they are extremely healthy for you! 



This past January, I posted the Quick & Easy Shake Pizza Crust. This recipe is not only simple to make but also simply delicious.

I was so surprised to find that I was able to convert the original recipe with very little effort. Initially I was concerned that the lack of gluten could make the crust runny. I mixed the ingredients together per the recipe but substituted the almond flour for the all purpose flour. It was just a little runnier than the original. I incorporated an additional 1/4 cup of almond flour and it was exactly as the original recipe.










Then I was concerned whether it would suspend the tomato sauce and toppings.and I questioned whether the crust would be crisp. All of my concerns were unfounded. In fact, it was unnecessary worrying as always. It was perfect all the way around! 

The sweet nutty taste of the almond flour crust combined with the earthy flavor of Baby Bella mushrooms for the topping is beyond heavenly! 


Note: Finding almond flour in my small town was impossible and I had no intention of making my own. Ordering Almond Flour from Nuts.Com is easy, their prices are good and they have been in business since 1929 (so they have quite a bit of history).

Florida can be very hot and humid, therefore finding a light lunch is sometimes what you need when faced with a wall of humidity. One of my favorite places is the Tiki Bar down by the port. They have one of the best Seared Ahi Tunas, and of course with a nice Pinot Grigio I am in heaven. As usual I wanted to recreate their recipe. They serve it with a seaweed salad, which I love, but I  couldn't find a place that carries it. I decided on my Cucumber salad, such a great idea! It gave it just the tartness and sweetness needed, with a little Asian flavors drafted from the Ginger, Sesame oil and Soy Sauce. If it's a little hot for you, try this recipe, you will love the flavors.

I also love pasta salad so I wondered what would happen if I mixed the two in traditional garden salad style. Well I am here to tell you that it is really scrumptious. Adding just a little bit of pasta to your salad gives it an additional texture that almost surprises you every time you take a bite and it is a very pleasant surprise.

Refried Black Beans - Easy Life Meal & Party PlanningWarmed up today in Florida but kind of cloudy so I needed to brighten up my late lunch/dinner. I'm grilling Mahi Mahi. Needing a side dish, I decided to do Refried Black Beans and grill my Ciabatta bread. Oh Yeah!! With some of my Pineapple Salsa for relish. Looking Brighter out there. I think a Pinot Grigio will go well....uncork and yum.

Ham with Cauliflower CasseroleMy cauliflower is now ready to harvest and I thought I would try a spin on ham and scalloped potatoes. I didn't want to break my New Year's Resolution to eat alot healthier so I replaced some ingredients with less calories and fat. It turned out awesome, even my family likes it!
