Cheese and Sausage Stuffed Raviolis

My husband and our two daughters's, Leslie and Savanah, love their home made pasta. When Leslie comes up and visit's they all get out the pasta machine and make some delicious home made pasta. What is really great is they make so much that I am able to freeze it for later use. It is just as good too.

Cheese and Sausage Stuffed Raviolis




Ravioli filling
2c - Ricotta Cheese
1c - Parmesan Cheese
1/2c - Romano Cheese
1 - egg
2Tbls -Fresh Parsley, chopped
3Tbls - Red Onion, finely chopped
1/2 tsp. - Fresh Oregano, chopped
1/2 tsp. - Fresh Thyme, chopped
If you want just a cheese filling stop here and put all ingredients in food processor and blend together.
1 c - Sausage, finely diced
1/4c - Yellow Pepper, finely diced
Cook sausage and pepper until soft and sausage cooked through. Put in strainer and let cool. Then add to cheese mixture.

Mummy Meatballs

A cute Halloween recipe that was really easy to do, well almost. We were having a heck of a time threading the spaghetti through the meatballs.  If you are planning a party you could do these ahead of time and freeze them too.

Mummy Meat balls
1 bag - Frozen Meatballs
1 can of Pillsbury Pizza dough
Spaghetti
Spaghetti sauce
Thaw out meatballs. Take a spaghetti noodle and thread three meatball onto noodle, break off any excess noodle.
Cut pizza dough in thin strips and wrap around skewered meatballs.
