French Bread Mini Meatball Pizza

French Bread Mini Meatball PizzaI would love to say that I "love" pizza but I don't unless it is a fresh mushroom pizza and then I drool all over myself.  Pizza is one of my husband's favorite meals and he asks for it way too often and not the kind of pizza you order. It has to be homemade (the dough not the sauce) and it can only contain hamburger or pepperoni with peppers. By the way, he "hates" mushrooms. So, the other night to his great dismay I refused to make a pizza unless I could do it differently.
Of course he was dramatic throughout the whole process. Even with all the drama I just kept soldiering forward with my plan knowing full well that he would love the French Bread Mini Meatball Pizza and he did. I even really liked this recipe which I made up as I went (although not that creatively because I couldn't completely devastate him) but it was still very yummy.
French Bread Mini Meatball Pizza Remove bread from the middle of the loaf leaving about 1 inch or so on the bottom and 1-2 inches on the side. Fill bottom of bread with pizza sauce, Italian seasoning and green peppers.

Make mini meatballs with ground beef (slightly smaller than a quarter). I used 25 mini meatballs and it was packed full. Fry meatballs in a skillet until completely cooked. Drain grease. Add a little more pizza sauce over the meatballs and then cover meatballs completely with Mozzarella cheese.

Bake at 400 degrees F for 20-30 minutes, depending on desired crustiness.  Remove from oven and sprinkle with finely grated fresh Parmesan Cheese.
