This casserole is a quick and tasty potato dish that goes with chicken, fish, pork & beef. In our house we love mashed potatoes and I will admit that sometimes, for convenience sake, we use packaged mashed potatoes. However, I kept thinking about how I could still stay true to the convenience and time factors and yet enhance the packaged mashed potato experience. What I ended up with was a cheddar cheese mashed potato casserole topped with bacon and bread crumbs. It was so good that we have made it several times since and have even prepared it with homemade mashed potatoes.Ingredients
2 cups mashed potatoes (I used Idahoan Loaded Bake Potato or homemade)
6 Tablespoons of Half and Half
1/4 cup cheddar cheese (plus extra to sprinkle on top)
2 tablespoons butter, melted
1/4 cup plain bread crumbs
1/4 cup crushed bacon pieces
Directions
Preheat oven to 350 degrees
Potatoes
Prepare mashed potatoes per package directions or usual homemade directions
Add an additional 6 tablespoons half & half or cream
1/4 cup cheddar cheese
Mix together and place in a medium size casserole dish
Sprinkle additional cheddar cheese on top
Topping
Mix melted butter with bread crumbs and bacon
Spread evenly on top of potatoes
Bake for 20-25 minutes or until hot in the center
