Cherry Coffee Cake
This is the most delicious coffee cake you will ever taste. A moist cake filled with sweet cherries and topped with a cream cheese glaze!
A favorite dish at potlucks! And so pretty for holidays.
1 cup butter
1 3/4 cup sugar
1/4 cup milk
1 teaspoon vanilla
3 cups flour
1/2 teaspoon salt
1 1/2 teaspoon baking powder
1 can Cherry Pie Filling
4 ounces cream cheese, softened
2 teaspoons butter, softened
1/2 teaspoon vanilla
8 ounces of powder sugar
3 tablespoons of milk (or more depending on desired frosting/glaze consistency)
Preheat oven to 350 degrees (convection 325 degrees)
Mix dry ingredients in a separate bowl
Cream butter and sugar.
Add eggs one at a time and beat well
Add milk and vanilla and beat well
Add dry ingredients and mix well
Reserve 1 3/4 cup of batter.
Spread remaining batter in a 11 x 17 pan.
Pour cherry filling over batter and "gently" spread evenly across batter.
Dollop remaining batter over top of cake and "gently" spread across the top. It will have a swirl affect.
Bake for 35 minutes or until toothpick comes out clean.
Beat cream cheese and butter together until well incorporated.
Add vanilla and mix.
Slowly add powder sugar and mix.
Add milk until you have desired consistency.
Note: You will need more milk if you want a true glaze. I prefer lightly frosted and use 3 tablespoons of milk plus a few drops.
