Every so often I find myself with an over abundance of food in the house. When this happens, I put a one-week ban on all grocery shopping (except for staples) and try to use what I have on hand. During a recent ban, I had Canadian bacon and regular bacon on hand so I included them in my favorite Cavatelli recipe. And boy did it pay off! The combination of bacon, canadian bacon and Italian Sausage with a spicy pasta sauce was absolutely delicious!
8 ounces of Cavatelli or Penne pasta
1 lb. hamburger or Italian Sausage
3 oz. Canadian bacon, diced
3 oz. crumbled bacon
1/2 cup onion, chopped
1-2 garlic cloves, minced
1 (26 ounce) jar marinara or pasta sauce
1 teaspoon dried Italian Seasoning
1/2 teaspoon black pepper
½ cup Parmesan Cheese, shredded
1 cup mozzarella cheese, shredded
Heat oven to 350 degrees F.
Dice Canadian bacon.
Cook pasta according to package directions. Drain and set aside.
In a large skillet cook the hamburger, onion and garlic until hamburger is done.
Drain excess grease from hamburger mixture.
Place mixture back into the skillet and add seasonings, Canadian bacon, crumbled bacon, Parmesan cheese, sauce and pasta. Stir until thoroughly incorporated.
Place mixture into a medium size greased casserole.
Sprinkle Mozzarella cheese on top.Bake uncovered for 35 minutes.
