Had a wonderful trip to Iowa last fall. While the family and I were shopping in Pella we stopped and had lunch. On the menu was a Cheeseburger Soup. Wow was it good. Thinking about how I could make it at home for my family I came up with this recipe. Everyone loved it.
Cheeseburger Soup
1 1/2 lbs. - Ground Beef
3/4 c - Onion, diced
3/4 c - Celery, diced
3/4 c - Carrots, dice
Saute vegetable for about 5 minutes, Add
5 c - Potatoes, diced
7 c - Chicken Broth
Bring to boil and cook until potatoes are soft.
Season ground beef with
1 tsp. - Italian Seasoning
1/2 tsp. - Garlic Powder
Salt and Pepper to taste
Saute beef and drain. Add half of your meat mixture to your vegetables, Using an immersion blender puree vegetables and beef. This helps thicken the soup. I leave about 1/3 of the vegetables in chunks.
Add
2 c - Velveeta, cubed
1 c - Cheddar Cheese
15 drops of Hot Sauce
Cook on medium heat until all cheeses are melted. Simmer for a hour, stirring occasionally so the cheese doesn't burn.
