You can't beat this tasty pulled pork soft taco recipe made easy by cooking crock pot style. The brown sugar and ginger rub is amazing and goes so well with the rest of the ingredients. Topped with a spiced up sour cream topping. You can't miss trying these pork tacos. It was a huge hit with my family and to add to the list of pluses it was easy!

Ingredients
Pork:
2 lbs. boneless pork butt roast
2 tablespoons brown sugar
1 tablespoon ground ginger
2 garlic cloves, smashed
1 small white onion, chopped
1/2 cup orange juice
2 limes, cut in half
12 soft tortillas
1 1/2 cups shredded cheese
1/2 cup sour cream
1 tsp. cumin
2 scallions, trimmed & chopped
Shredded Lettuce
3/4 cup fresh salsa
Note: You can reduce the calories by using nonfat sour cream and reduced fat cheese for a total of 457 calories per serving. A great calorie count for a delectable and filling meal.
Trim excess fat off roast.
In a small bowl, combine brown sugar and ginger and rub over roast.
Place roast in slow cooker with garlic, onion and orange juice.
Cook on low heat for 8 hours or high for 4-6 hours.
When roast is done, remove to a large bow and shred with forks.
Strain liquid from slow cooker and pour over pulled pork to moisten.
Squeeze lime juice on top and mix well.
In a small bowl, mix together sour cream, cumin and chopped scallions.
Heat tortillas in skillet, microwave or oven. Put pulled pork in tortilla and top with sour cream mixture, shredded lettuce and salsa.
