These bacon wrapped onion rings are unbelievably delicious. In fact, they are so delicious that they never made it to the buffet table - everyone was picking them right off the smoker! They make a great appetizer but would also be a delicious topping a burger.

Zucchini Spaghetti
My husband bought a gadget that makes zucchini into a spaghetti. He fixed it for me the other night and I loved it. He actually cooks it in the microwave for about 5 minutes and it was done. If you have a mandolin there are settings to make the spaghetti too. Don't tell my husband though, he loves his new gadget.
Here is the thing, I like about the zucchini spaghetti, you can put pasta sauce on it or dice up fresh tomatoes, mushrooms, onions and peppers saute it and have it as a meal or side dish and it be done in a matter of minutes.

Broccoli Cheese Soup
Over the last few months I have been tending to my garden all the while every one else is snowed in. This time of year is perfect in Florida for growing some of the best produce. I have about 10 heads of broccoli in the refrigerator and needed to do something with them besides steam it, that was getting a little boring. When the last of my family finally headed back to Iowa they left behind numerous amounts of cheeses and I thought of a broccoli soup. So I literally took out all the cheese and used it. The soup had such great flavor. As you can see by the recipe, they left behind heavy cream and half and half those ingredients made it even better.Monday, August 26, 2013
Garden Fresh Veggie Quesadilla
I was so excited this spring when I moved from just container gardening to two raised bed gardening. It is funny how the small things in life bring such pleasure and that was true the day I planted zucchini in my new garden. I am still excited but I am overloaded with zucchini. Sweet Pepper Cowboy Candy
Last week I posted that it is almost the end of my season for my vegatable garden. I only have a few things that the heat hasn't burn't off. What is left is my sweet pepper plants and jalapeno plants. I had picked almost two pounds of my sweet peppers and 1 pound of my jalapeno's. I decided to do a Cowboy Candy with them. In my orginal recipe it calls for 3 punds of jalapeno's. Knowing that the sweet peppers could change the flavor I decided to go ahead and experiment and see how it turns out.Wednesday, May 22, 2013

Grilled Bourbon Glazed Portobello Mushroom with a Mini Cheddar Jack Hamburger
What a conundrum Portobello burger or cheeseburger for lunch. I use to make high level decisions all day long and now I can't even make a choice on what to eat for lunch. I guess this is what happens when you are retired. So I decided to do both, portobello cap grilled with bourbon sauce and a mini cheddar jack hamburger on top. How could I possibly go wrong? Mushroom Au Gratin Casserole
Last night I served Mushroom Gratin Casserole as a side dish with filet mignon. I love serving this dish with beef but it also goes well with chicken. In fact, I like it so much that sometimes I fix it just to have on hand for my lunch during the week (it heats up great as a leftover).
