Scalloped cabbage is full of creamy cheesy goodness topped with buttered and peppered crackers. One of my personal favorite recipes. Scalloped cabbage has been a holiday tradition in our family for as long as I can remember. This casserole is a lovely addition to holiday meals, however, I make it several times in between holidays.

Even if you are not a cabbage lover you might be converted! Cabbage baked in a cheesy sauce with a crunchy topping is like no other cabbage you will ever taste and it is certainly worth a try even if you are skeptical.

Zucchini Spaghetti

My husband bought a gadget that makes zucchini into a spaghetti. He fixed it for me the other night and I loved it. He actually cooks it in the microwave for about 5 minutes and it was done. If you have a mandolin there are settings to make the spaghetti too. Don't tell my husband though, he loves his new gadget.
Here is the thing, I like about the zucchini spaghetti, you can put pasta sauce on it or dice up fresh tomatoes, mushrooms, onions and peppers saute it and have it as a  meal or side dish and it be done in a matter of minutes.

Broccoli Cheese Soup

Broccoli Cheese Soup by Easy Life Meal and Party PlanningOver the last few months I have been tending to my garden all the while every one else is snowed in. This time of year is perfect in Florida for growing some of the best produce. I have about 10 heads of broccoli in the refrigerator and needed to do something with them besides steam it, that was getting a little boring. When the last of my family finally headed back to Iowa they left behind numerous amounts of cheeses and I thought of a broccoli soup. So I literally took out all the cheese and used it. The soup had such great flavor. As you can see by the recipe, they left behind heavy cream and half and half those ingredients made it even better.

Garden Fresh Veggie Quesadilla

I was so excited this spring when I moved from just container gardening to two raised bed gardening. It is funny how the small things in life bring such pleasure and that was true the day I planted zucchini in my new garden. I am still excited but I am overloaded with zucchini. It is in my refrigerator, on my counter,and  in bags for my daughter. Simply said it is everywhere!

Sweet Pepper Cowboy CandyLast week  I posted that it is almost the end of my season for my vegatable garden. I only have a few things that the heat hasn't burn't off. What is left is my sweet pepper plants and jalapeno plants. I had picked almost two pounds of my sweet peppers and 1 pound of my jalapeno's. I decided to do a Cowboy Candy with them. In my orginal recipe it calls for 3 punds of jalapeno's. Knowing that the sweet peppers could change the flavor I decided to go ahead and experiment and see how it turns out.

Yellow Shiitake Mushroom Stir Fry with Asian OrzoMy Sister and I have a love for mushrooms, so when we were at the green market we purchased fresh Yellow Shiitake’s. There are so many wonderful ways to cook them but I like to keep it simple so you don’t lose their flavors. While we were there we also picked up fresh Asian flavored Orzo for our side dish.
 A quick stir fry with onion, peppers and chicken over Asian inspired Orzo is a perfect way to celebrate their earthy flavor.

I love serving this dish with beef but it also goes well with chicken. In fact, I like it so much that sometimes I fix it just to have on hand for my lunch during the week (it heats up great as a leftover). You are going to love this cheesy au gratin recipe with white and baby bella mushcrooms. It is very rich so a little goes a long way!
