The Ultimate Strawberry Shortcake

This shortcake recipe has been a family tradition and well worth putting it on your baking bucket list. It really is the ultimate shortcake for strawberries.
This is a dense cake which tastes wonderful combined with the fruity taste of sweetened strawberries and light whipped cream.
A perfect refreshing summer dessert.It is so quick and easy to make. Hence it's name Busy Day Cake - a very old recipe from my 1976 Better Homes & Garden cookbook.
You cannot take "shortcuts" when it comes to strawberry shortcake! No prepackaged shortcakes found in the strawberry isle. It just isn't the same experience.

Thumbprint Cookies with a Sweet Nutty Kick
I was so excited to be involved in the April Showers Bring May Flours project with www.nuts.com. We were challenged to convert our Quick & Easy Shake Pizza Crust from an all purpose flour crust to a blanched almond flour crust. My mind immediately went to how wonderful thumbprint cookies would be with almond flour incorporated. It was like a song that gets stuck in your head and it just won't quit. I just kept thinking about trying almond flour with my thumbprint cookies. So I caved and made thumbprint cookies. I didn't want to make a full conversion of flour. I thought a light sweet nutty almond flavor to the cookies would be such a delightful taste.
I took my original recipe and made it exactly as I always do but combined some almond flour with the all purpose flour. I was thrilled at how well the dough rolled and how nice the print was. No cracking of the cookie around the edge of the print. These cookies turned out exactly as I had envisioned. The blanched almond flour added a light sweet nutty taste and the bonus of a little extra moisture to the cookies. I topped the cookies with a butter cream frosting with pure almond extra. Perfect and pretty.
During the process of frosting the cookies I kept thinking this would also be amazing if you filled the fingerprint with apricot jam and sprinkled chopped almonds on top. So now you know what I will be up to net week!
Print Recipe
Ingredients:
1/2 cup soft butter
1/4 cup brown sugar
1 egg yolk
1/2 teaspoon vanilla
1 cup all purpose flour
1/4 cup + 1 tablespoon blanched almond flour
1/4 teaspoon salt
Directions:
Preheat oven to 350 degrees F.
Place parchment paper on cookie sheet.
Blend flours and salt together in a separate bowl.
Mix butter and brown sugar together until creamy.
Add egg yolk and mix until well incorporated.
Add vanilla and mix.
Slowly add dry ingredients and mix until well incorporated.
Bake 10 to 12 minutes or until lightly browned. Do not over bake!
Butter Cream Frosting
1 stick of softened butter
1 1lb box of powdered sugar
1/4 cup milk
1/2-1 teaspoon pure almond extract
Mix butter until whipped. Slowly add powdered sugar and milk until creamy and stiff enough to spread or pipe. Finally add almond extract to taste.
Note: Finding almond flour in my small town was impossible and I had no intention of making my own. Ordering Almond Flour from Nuts.Com is easy, their prices are good and they have been in business since 1929 (so they have quite a bit of history).

Toffee Cookies with Heath Pieces & Bits - The Perfect Cookie
Hershey's Milk Chocolate & Toffee Heath Pieces caught my eye the other day. I don't know if they have been around for awhile or not but this was the first time I had seen them. The minute I saw them I was thinking toffee cookies with pieces and bits - double yummmm! I don't have a favorite toffee cookie recipe so I turned to Hershey's Kitchen for the recipe.These cookies are perfectly soft, moist & scrumptious. Actually the Pefect Cookie!

Valentine Linzer Cookies - Combo Pack Style
I didn't start out making Linzer cookies although it was on my "maybe" list. What I originally made was some decadent brownies with mini chocolate chips and marshmallows - yummm (soon to be posted). And then my husband walked in the kitchen looking like I had just taken all his toys away because I didn't make him something (non-chocolate)! So I say to myself, "I could make the Linzer cookies which he loves and it is the Valentine holiday (almost) and I don't really feel like it and it means this will run right into making supper, i.e., all afternoon in the kitchen". Rolo Turtles
I got this recipe off of a Hershey's candy site and thought it looked so easy why not give it a try. It taste so much like the turtles but with an extra crunch with a little salt. Awesome right? So simple and so good. Trust me this will be a keeper.Rolo Turtles
1 bag of Rolos
1 bag of small cross pretzels
1 bag of pecans
Heat oven to 350 degrees and line cookie sheet with parchment paper. Place pretzels down on parchment paper then top with one unwrapped Rolo. Bake 3-5 minutes until caramel gets soft, but does not melt. Top with pecan's and EAT!

Holiday Chocolate Thumbprint Cookies
This weekend was spent experimenting with a new holiday cookie recipe that I had written down years ago but never pursued. If you could see my collection of recipes torn out of magazines and handwritten you would know how easy it is for me to forget or lose a recipe!! Good grief, I really need to get organized which I have been telling myself for years.
These cookies are delightful but of course I find chocolate irresistible so they are actually doubly delightful. Who can resist a delicious Hershey Kiss inside a chocolate cookie with creamy buttery frosting.

Pumpkin Gem Cupcakes with Cream Cheese Frosting
This recipe is easy to make, the cupcakes raise beautifully and they are ultra moist! Topped with Cream Cheese Frosting they make an absolutely gorgeous cupcake.
Print Recipe
Ingredients
1 yellow cake mix
3 eggs
½ cup canola oil
2 teasp. Cinnamon
20 oz. pumpkin
Cupcake holders
Instructions
Preheat oven to 350.
Place cupcake holders in cupcake pans or grease and flour cupcake pans.
Blend cake mix, eggs and canola oil. Add cinnamon and pumpkin and mix well. Fill muffin pans 2/3 full. Bake for 15-20 minutes (depending upon size of cupcake holder size). Use a wooden pick to determine doneness (place pick in center of a muffin and it should come out with only a few moist crumbs). Remove from oven and cool in muffin pans until you are able to move them to a cooling rack. Let cool before frosting.

During my trip to Florida my sister, +Shawna Williams, and I spent time being festive! That is right, our kids are grown and we still made decorated sugar cookies. I used to make them with my children when they were younger and now I have sugar cookie decorating parties with my grandchildren. I must confess that I find it somewhat exhausting. One Dough Recipe for Chocolate Chip, Oatmeal & M&M Cookies Makes A Happy Family
Sometimes my family drives me nuts especially when it comes to baking cookies. My son and son-in-law only like chocolate chip cookies; my husband hates chocolate chips and he will only eat oatmeal and peanut butter cookies and my daughters only like M&M cookies. Although the kids have their own homes, they are like bears and can sniff homemade cookies from miles away. Every time I make one type of cookie there is substantial boohooing going on because I am showing favoritism and then they guilt me into making their favorite cookies as well. Out of sheer frustration, I decided that I needed one recipe that allows me to make three different types of cookies at the same time. So here is my solution to a whiny family and it is a very successful solution. However, I have caught them counting how many cookies are made of each type to make sure they are evenly distributed!
Ingredients
2 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter, softened
1/2 cup shortening
3/4 cup sugar
3/4 cup brown sugar, packed
2 teaspoons vanilla extract
2 eggs
3/4 cups chocolate chips
3/4 cups M&M's
3/4 cup quick oatmeal
Directions
Preheat oven to 375 degrees F. Stir flour with baking soda and salt, set aside. Beat butter and shortening until mixed well, add sugar and brown sugar at medium speed until creamy. Add vanilla and eggs, one at a time, mixing on low until incorporated. Gradually blend dry mixture into creamed mixture.
Using two medium size bowls and the mixing bowl, separate the dough into 3 parts (1/3 each). Add 3/4 cup oatmeal to the mixing bowl dough and mix to incorporate the oatmeal. Stir in chocolate chips to one of the medium size bowls and stir in M&M's to the remaining medium size bowl.
Bake for 9 to 11 minutes.

Fancy Chocolate Fudge Cupcakes with White Almond Truffle Filling and Ganache Piping
It was my daughter’s 22nd
birthday last night and for the first time ever she did not request a
store-bought ice cream cake. This was truly
a night to celebrate! Instead she asked for cupcakes. Oh-boy, that wasn’t quite what I had in mind. In true Mom style, I decided I would make her “fancy” cupcakes. Well, the truffle
filling, frosting and decorating were fancy and homemade. It was a busy day with limited time so I used
a cake mix which I personally like just fine. I grew up in the days when cake
mixes were not so great and we made our own cakes which were not always that
great either. Since those early baking
years, cake mixes have come a long way and when you are busy they taste pretty darn
good!
