Mini Cherry Muffins
This is a scrumptious very cherry and moist muffin recipe that will be a big hit for breakfast or brunch. These muffins also freeze nicely for those mornings when you are in a hurry!

Ingredients
Pecans, chopped
4 tablespoons butter
1/2 cup brown sugar
1/2 cup white sugar
2 egg yolks
1 cup flour
1/4 teaspoon baking powder
2 tablespoons maraschino cherry juice
2 egg whites, stiffly beaten
Marachino Cherries
Powdered Sugar
Directions
Cream butter and add sugars. Add egg yolks, flour, baking powder and cherry juice. Blend well. Fold in beaten egg whites. Grease miniature muffin pans or use miniature cupcake liners. Sprinkle chopped nuts on bottom. Spoon small teaspoons of batter into tins.
Place 1 whole maraschino cherry in center then drop another small teaspoon of batter on top. Sprinkle a few nuts over batter. Bake at 375 for about 10 minutes. Roll muffins in powdered sugar while still hot or sprinkle the top with powdered sugar. If freezing, freeze muffins and roll in powder sugar when thawed and ready to use.
